أخي الكريم ستحتاج أولا أن يكون لديك رخصة لاستخدام (Spatial analyst extension) و أظن إنك بالفعل لديك واحدة مادمت تتعامل مع الصور , و عليك إتباع الخطوات التالية لتقطيع كل صورة : (أفترضت إنك لديك ملف الصورة raster و ملف آخر به إمتداد حدود الخريطة Shapefile)

Add the two layers to the map , the raster image and the shapefile
show the spatial analyst toolbar if it is hidden
in the Spatial analyst toolbar , select spatial analyst-----> options
when the options dialog apperas then select your shapefile as the extent in the General & Extent tabs (look 1.jpg) ,so it will be your analysis extent
Click Ok
Now from the spatial analyst toolbar open the raster calculator(Look 2.jpg) ,make sure that your image is in the ratsers list
in the raster calculator, Double click your image name then click evaluate (look 3.jpg)you should see the result in arcmap
right click the result raster in Arcmap then select Data----> make permenant to save your new raster
